Chef Allie’s Black Eyed Pea Salad

A tasty side dish for either your next BBQ or Taco Tuesday!

Black Eyed Pea Salad

Serves 8

Ingredients

1/4 TspBlack Pepper
2 TspAvocado Oil
2 TbspCilantro
1Green Bell Pepper
1 TspCumin
1/2Medium Red Onion
2 TbspLime Juice
1Red Bell Pepper
8 OuncesGrape Tomatoes
1/4 TspKosher Salt
2Cloves of Garlic
1 TspPaprika
1Hass Avocado
2-1/2 CupsBlack Eyed Peas

Directions

  • Drain and rinse black eyed peas and place in a large bowl.
  • Dice peppers, onions and avocado. Add to the large bowl.
  • Quarter the grape tomatoes and add to the bowl.
  • Mince the garlic and add to the bowl.
  • Chop the cilantro and add to the bowl.
  • Add remaining ingredients to the bowl, and season with salt and pepper to taste.
  • Enjoy!
