Chef Allie’s Black Eyed Pea Salad
A tasty side dish for either your next BBQ or Taco Tuesday!
Black Eyed Pea Salad
Serves 8
Ingredients
1/4 Tsp | Black Pepper |
2 Tsp | Avocado Oil |
2 Tbsp | Cilantro |
1 | Green Bell Pepper |
1 Tsp | Cumin |
1/2 | Medium Red Onion |
2 Tbsp | Lime Juice |
1 | Red Bell Pepper |
8 Ounces | Grape Tomatoes |
1/4 Tsp | Kosher Salt |
2 | Cloves of Garlic |
1 Tsp | Paprika |
1 | Hass Avocado |
2-1/2 Cups | Black Eyed Peas |
Directions
- Drain and rinse black eyed peas and place in a large bowl.
- Dice peppers, onions and avocado. Add to the large bowl.
- Quarter the grape tomatoes and add to the bowl.
- Mince the garlic and add to the bowl.
- Chop the cilantro and add to the bowl.
- Add remaining ingredients to the bowl, and season with salt and pepper to taste.
- Enjoy!
