Chef Allie’s Broccoli Blueberry Salad with Chickpeas
An interesting but delicious combination of broccoli and blueberries that just works!
Black Eyed Pea Salad
Serves 8
Ingredients
2 Tsp | Dijon |
1/3 Cup | Cranberries |
1 Cup | Chopped Raw Carrots |
4 Cups | Broccoli |
2 Tbsp | Lemon Juice |
1/4 Cup | Sunflower Seeds |
1 Tsp | Avocado Oil |
1 Tbsp | Apple Cider Vinegar |
1 Medium | Cucumber |
1 Tsp | Poppy Seeds |
1 Cup | Chickpeas |
1/4 Tsp | Kosher Salt |
2 | Cloves of Garlic |
1/4 Tsp | Black Pepper |
1-1/2 Cup | Blueberries |
1 Tbsp | Pure Maple Syrup |
Directions
- Chop the broccoli super fine and add to a large bowl.
- Drain and rinse chickpeas and add to the bowl.
- Chop the cucumbers and add to the bowl.
- Shred the carrots and add to the bowl.
- Dice the red onions and add to the bowl.
- Add remaining ingredients, mix and season to taste with salt and pepper.
- Enjoy!
