Chef Allie’s Broccoli Blueberry Salad with Chickpeas

An interesting but delicious combination of broccoli and blueberries that just works!

Black Eyed Pea Salad

Serves 8

Ingredients

2 TspDijon
1/3 CupCranberries
1 CupChopped Raw Carrots
4 CupsBroccoli
2 TbspLemon Juice
1/4 CupSunflower Seeds
1 TspAvocado Oil
1 TbspApple Cider Vinegar
1 MediumCucumber
1 TspPoppy Seeds
1 CupChickpeas
1/4 TspKosher Salt
2Cloves of Garlic
1/4 TspBlack Pepper
1-1/2 CupBlueberries
1 TbspPure Maple Syrup

Directions

  • Chop the broccoli super fine and add to a large bowl.
  • Drain and rinse chickpeas and add to the bowl.
  • Chop the cucumbers and add to the bowl.
  • Shred the carrots and add to the bowl.
  • Dice the red onions and add to the bowl.
  • Add remaining ingredients, mix and season to taste with salt and pepper.
  • Enjoy!
