Chef Allie’s Raspberry Pretzel Salad
One of my all time favorite childhood desserts lightened up!
Raspberry Pretzel Salad
Serves 12
Ingredients
160 | Pretzel Sticks |
1/3 Cup | Light Butter (melted) |
2 Tbsp | Monkfruit Sweetener |
1-1/2 Cups | Non-fat Plain Greek Yogurt |
1/4 Tsp | Vanilla |
8 Tbsp | Fat Free Cool Whip |
1 Package | Simply Delish Sugar Free Vanilla Pudding Mix |
1 Package | Simply Delish Raspberry Jello Mix |
1/3 Cup | Cold Water |
1-1/3 Cup | Boiling Water |
2 Pints | Fresh Raspberries |
Directions
- Preheat oven to 350 degrees
- Melt the butter and set aside.
- Place pretzels into a ziplock bag and break into small pieces.
- In a bowl combine the pretzels, butter and sugar. Mix until combined.
- Place pretzel mixture into a greased oven safe dish and press with fingers firmly to melt crust.
- Bake for 12 minutes and let cool.
- While the pretzel crust is in the oven, I’m a bowl put the nonfat Greek yogurt, vanilla, cool whip and sugar free pudding mix. Mix until combined.
- Place yogurt mixture over the pretzel crust and smooth out.
- In a separate bowl add the jello, cold water and hot water. Mix until dissolved.
- Add the fresh raspberries then mash up.
- Pour over the yogurt mixture and place entire dish into the fridge for a few hours to solidify.
- Enjoy once done!
