Chef Allie’s Carrot Banana Muffins
I love anything that has banana, so why not make a carrot cake inspired muffin?!
Carrot Banana Muffins
Serves 12
Ingredients
3-4 | Bananas |
2 | Eggs |
1/4 Cup | Unsweetened Applesauce |
1 Tsp | Vanilla Extract |
1 Tsp | Baking Powder |
1/2 Cup | Monkfruit Sweetener |
1 Cup | Flour |
1 Tsp | Cinnamon |
Pinch | Salt |
Mix In: | |
1 Cup | Shredded Carrots (packed) |
Topping: | |
1/4 Cup | Unsweetened Shredded Coconut |
Directions
- Preheat oven to 350 degrees F
- In a bowl, add the bananas and mash really well
- Add the eggs, applesauce, vanilla, and mix
- Add the baking soda, baking powder, monkfruit sweetener, flour, cinnamon, salt, and mix until combined
- Add the shredded carrots and fold into the batter
- Add the batter to a greased muffin pan
- Top the batter with the shredded coconut Bake at 350 for 25-30 minutes
