Chef Allie’s Carrot Banana Muffins

I love anything that has banana, so why not make a carrot cake inspired muffin?!

Carrot Banana Muffins

Serves 12


1/4 CupUnsweetened Applesauce
1 TspVanilla Extract
1 TspBaking Powder
1/2 CupMonkfruit Sweetener
1 CupFlour
1 TspCinnamon
Mix In:
1 CupShredded Carrots (packed)
1/4 CupUnsweetened Shredded Coconut



  • Preheat oven to 350 degrees F
  • In a bowl, add the bananas and mash really well
  • Add the eggs, applesauce, vanilla, and mix
  • Add the baking soda, baking powder, monkfruit sweetener, flour, cinnamon, salt, and mix until combined
  • Add the shredded carrots and fold into the batter
  • Add the batter to a greased muffin pan
  • Top the batter with the shredded coconut Bake at 350 for 25-30 minutes
