Chef Allie’s Cranberry Balsamic Chicken

Cranberry Balsamic Chicken
Serves 4
Ingredients
2 | Large Chicken Breasts or 4 Small |
Avocado Oil Spray | |
Salt | |
Pepper | |
1 Tbsp | Minced Garlic |
2 Cups | Fresh Cranberries |
1 Cup | Chicken Broth |
4 | Rosemary Springs |
Zest of One Small Orange | |
Juice of One Small Orange | |
2 Tbsp | Balsamic Vinegar |
1 Tbsp | Honey |
1/2 Tbsp | Honey Mustard |
Directions
- Season the chicken breast with salt and pepper.
- In a oven safe pan, preheat to medium heat.
- Spray pan lightly with avocado oil.
- Add the chicken and brown on both sides.
- Once browned, set aside. (Do not cook all the way through).
- In the same pan, lower heat and add the garlic.
- Sauté garlic for about 20 seconds.
- Add the fresh cranberries followed by the chicken broth, rosemary sprigs, orange zest, orange juice, balsamic vinegar, honey and honey mustard.
- Bring to a boil and smash a few cranberries down.
- Lower heat and add the chicken back in along with drippings from the plate.
- Cook until chicken reached 165F internal temperature.
- Place under a broiler if you are wanting a more browned chicken.
- Remove rosemary and replace with fresh if desired for presentation.
- Garnish with more orange zest, salt and pepper.
- Serve, and enjoy!
