Chef Allie’s Pumpkin Apple Muffins

Pumpkin Apple Muffins
Serves 12
Ingredients
MUFFIN BATTER | |
1-1/4 Cup | Flour |
1/2 Cup | Monkfruit Sweetener |
1 Tsp | Dak’s Spices Pumpkin Spice |
1/2 Tsp | Cinnamon |
1 Tsp | Baking Soda |
1/2 Tsp | Salt |
1 Cup | Libby’s Pure Pumpkin Puree |
1 Cup | Cinnamon Apples |
1/4 Cup | Water |
2 | Eggs |
TOPPING | |
Spray Butter | |
3 Tbsp | Monkfruit Sweetener |
1/2 Tsp | Pumpkin Pie Spice |
1 Tsp | Cinnamon |
Directions
- Preheat oven to 350 degrees.
- Spray cupcake/muffin pan with cooking spray.
- Combine all dry ingredients in a large bowl, mix and set aside.
- In a separate bowl combine all the wet ingredients and add wet ingredients into dry until flour is fully combined with the wet ingredients.
- Scoop 12 portions into the pan.
- Bake for 15-20 minutes or until til toothpick comes out clean.
- While muffins are in the oven combine the 3 TBSP Monkfruit sweetener with 1/2 tsp pumpkin pie spice and 1 tsp of cinnamon. Set aside.
- Once muffins are out of the oven, spray with butter and sprinkle with sugar mixture.
- Cool on wire wrack before removing and enjoy.
