Chef Allie’s Pumpkin Apple Muffins

A family recipe made healthier!

Pumpkin Apple Muffins

Serves 12

Ingredients

MUFFIN BATTER
1-1/4 CupFlour
1/2 CupMonkfruit Sweetener
1 TspDak’s Spices Pumpkin Spice
1/2 TspCinnamon
1 TspBaking Soda
1/2 TspSalt
1 CupLibby’s Pure Pumpkin Puree
1 CupCinnamon Apples
1/4 CupWater
2Eggs
TOPPING
Spray Butter
3 TbspMonkfruit Sweetener
1/2 TspPumpkin Pie Spice
1 TspCinnamon

Directions

  • Preheat oven to 350 degrees.
  • Spray cupcake/muffin pan with cooking spray.
  • Combine all dry ingredients in a large bowl, mix and set aside.
  • In a separate bowl combine all the wet ingredients and add wet ingredients into dry until flour is fully combined with the wet ingredients.
  • Scoop 12 portions into the pan.
  • Bake for 15-20 minutes or until til toothpick comes out clean.
  • While muffins are in the oven combine the 3 TBSP Monkfruit sweetener with 1/2 tsp pumpkin pie spice and 1 tsp of cinnamon. Set aside.
  • Once muffins are out of the oven, spray with butter and sprinkle with sugar mixture.
  • Cool on wire wrack before removing and enjoy.
