Chef Genie’s Christmas Feast
Up first for our In The Kitchen Christmas Feast Edition is Chef Genie! She was in the kitchen this week cooking up her very own Healthi Christmas Feast just in time for the holidays! Each recipe was curated with our members in mind to keep them on track! Below you will find find an appetizer, main dish, and dessert that we just know your whole family will enjoy!
Parmesan Caesar Salad Cups
Serves 12 People
Ingredients
1 Cup | Shredded Parmesan Cheese |
1 Bag | Caesar Salad Kit |
Directions
- Place 12 individual tablespoons of Parmesan Cheese onto a parchment lined sheet pan. Bake at 400F for three minutes until the chase is melted.
- Cool for one minute, then gently remove the Parmesan Cheese and place on the backside of a muffin tin. Mold it around the muffin tin and let it cool completely. Add Caesar salad mix to a bowl and toss together with the dressing.
- Once the cups are cooled, remove them from the muffin tin, spoon the salad inside, and top with croutons and enjoy!

Baked Salmon
Serves 6 People
Ingredients
2 Pounds | Salmon Filet (No Skin) |
2 Tbsp | Olive Oil |
1 Tsp | Salt |
1/4 Tsp | Black Pepper |
1/2 Tsp | Garlic Powder |
1 | Lemon (Sliced) |
Directions
- Coat salmon with olive oil and seasoning on both sides.
- Place on a foil lined sheet pan and top with lemon slices.
- Bake 25-30 minutes at 400F. Serve with lemon wedge.

Phyllo Cannoli Cups
Serves 15 People
Ingredients
1 Package | Phyllo Pastry Shells |
4 Tbsp | Mascarpone Cheese |
2/3 Cup | Whole Milk Ricotta |
1/4 Tsp | Vanilla Extract |
3 Tbsp | Powdered Sugar |
1/8 Tsp | Cinnamon |
1/4 Cup | Mini Chocolate Chips |
1 Tbsp | Crushed Pistachios |
Directions
- Place phyllo shells onto a baking sheet and bake at 350F for 5 minutes, then cool completely.
- In a bowl, combine mascarpone, ricotta, vanilla, powdered sugar, cinnamon, and chocolate chips.
- Spoon into cooled shells (do this right before serving to prevent the shells from getting soggy). Top with chopped pistachios and enjoy immediately.
