Chef Hibah’s Baked White Fish & Veggies
As a child, my mother always incorporated fish into our dinner rotation. She always had a unique and delicious way of making every dish. I love this recipe, I hope you will too!
Baked White Fish & Veggies
Serves 8
Ingredients
10 | Yellow Mini Potatoes |
3 | Stalks of Celery |
1 | Lemon |
3 | Serrano Peppers |
2 Tbsp | Minced Garlic |
8 | White Fish Filets |
1 Cup | Cilantro |
2 | Medium Tomatoes |
Directions
- Begin by adding the minced garlic, EVOO, black pepper, Old Bay seasoning, Cumin, salt, and Cilantro to a bowl.
Combine them well. - Now, place the White Fish to a baking tray.
- Pour half the spice mixture evenly over White Fish.
- Now sprinkle the remaining spices from the ingredient list on top.
- Add the vegetable to the spice mixture and coat them well!
- Finally, add all of the vegetables on top of the fish in the tray.
- Pour any leftovers of the spice mixture on top.
- Cover with foil and bake until the potatoes are tender and the fish is fully cooked (every oven is different)
- Enjoy!
