Chef Hibah’s Baked White Fish & Veggies

As a child, my mother always incorporated fish into our dinner rotation. She always had a unique and delicious way of making every dish. I love this recipe, I hope you will too!

Baked White Fish & Veggies

Serves 8

Ingredients

10Yellow Mini Potatoes
3Stalks of Celery
1Lemon
3Serrano Peppers
2 TbspMinced Garlic
8White Fish Filets
1 CupCilantro
2Medium Tomatoes

Directions

  • Begin by adding the minced garlic, EVOO, black pepper, Old Bay seasoning, Cumin, salt, and Cilantro to a bowl.
    Combine them well.
  • Now, place the White Fish to a baking tray.
  • Pour half the spice mixture evenly over White Fish.
  • Now sprinkle the remaining spices from the ingredient list on top.
  • Add the vegetable to the spice mixture and coat them well!
  • Finally, add all of the vegetables on top of the fish in the tray.
  • Pour any leftovers of the spice mixture on top.
  • Cover with foil and bake until the potatoes are tender and the fish is fully cooked (every oven is different)
  • Enjoy!
