Chef Hibah’s Roasted Lamb Chops and Veggies
Savoring winter warmth one bite at a time: Juicy roasted lamb chops, veggies, and a sprinkle of seasonal magic!
Roasted Lamb Chops and Veggies
Serves 10
Ingredients
2 Racks | Lamb Chops |
1 Tbsp | EVOO |
3 Cups | Green Beans |
2 Medium | Sweet Potatoes (peeled and cubed) |
1 Small Container | Pearl Onions |
1 Tbsp | All Spice |
1 Tsp | Chili Powder |
1 Tbsp | Black Pepper |
2 Tbsp | Onion Powder |
1 Tbsp | Garlic Salt |
Salt to Taste | |
2 Cups | Stock |
Directions
Add veggies to a baking tray and add 1 tbsp onion powder and 1/2 tbsp garlic salt. Combine well.
Add lamb chops on top – add EVOO on all sides then add remaining spices and rub them into the lamb chops!
Pour the stock into the bottom of the pan.
Cover and bake to your desired doneness. I like ours medium and baked them for 25 minutes! Take off lid for and bake for an additional 5 minutes!
