Chef Jordan’s Apple Butter Cookie Bars

Looks like a brownie, tastes like a cookie + toaster pastry combined! Perfect use of your freshly made apple butter from your local apple farm or just a good way to use store bought apple butter for a fall treat!

Apple Butter Cookie Bars

Serves 12

Ingredients

3/4 CupButter, melted
1.5 CupsBrown Sugar Substitue
1 Large Egg
1 Large Egg Yolk
2 TspVanilla Extract
1/4 TspSalt
1/2 TspBaking Powder
1.5 CupsAll Purpose Flour
1/4 CupPowdered Sugar Substitute
1 TbspPure Maple Syrup
2 TbspHeavy Cream

Directions

  • 1. Preheat oven to 350F.
  • 2. Prepare an 8×8 pan with parchment paper and a little bit of nonstick spray to make it easy to remove.
  • 3. Melt your butter in the microwave in 30 sec increments until melted. Add in brown sugar sub & beat with a hand mixer until smooth.
  • 4. Add in room temperature egg, egg yolk mix again until incorporated. Add vanilla extract, salt, baking powder, flour, and fold into wet mixture until just combined. Do not over mix.
  • 5. Press mixture into prepared pan and bake for about 20 mins. Pull directly from oven to freezer for 15 mins to set.
  • 6. Combine cream, powdered sugar sub, and maple syrup to create the glaze. Remove bars from freezer, drizzle with glaze, and freeze for about 30 mins. Cut into 12 even squares. Store in an airtight container in the fridge.
  • Notes: If you’d like to eat these warm, pop one bar in the microwave for about 10-15 seconds.
  • ****Eggs should be room temp! This will keep the butter from clotting.
  • This recipe would be interchangeable with any jam or preserves you have on hand.
  • Feel free to use a butter substitute to reduce calories further. Additionally you may choose to use a sugar free maple style pancake syrup such as ChocZero or Smuckers.
