Roasted Red Pepper Soup

This soup is so simple and so comforting!

Serves 6 People


4 CupsChicken Broth
1 CupOnions
0.5 TspBlack Pepper
4 MediumGarlic
1 TspOregano
1 CanRoasted Red Peppers
1 TbspOlive Oil
1 TspSalt
0.5 CupHeavy Whipping Cream
3 TbspTomato Paste


  • Saute onion and garlic in olive oil for three minutes.Add in tomato paste and sauté an additional minute.

    Add in diced roasted red peppers, chicken broth, and seasoning.

    Bring to a boil and simmer for 20 minutes.

    Cut the heat. Use an immersion blender to blend the soup smooth or place it into a blender and blend it smooth.

    Stir in heavy whipping cream and serve.
