Chocolate Protein Pancake
Serves 1
Ingredients
Chocolate Protein Powder | 1 |
Unsweetened Cocoa Powder | 1 tbsp |
Milk | 1/3 cup |
Oat Bran | 45g |
Vanilla Extract | 0.5 tsp |
Liquid Egg Whites | 46g |
Directions
Place pancake griddle or skillet on medium-low heat. Combine all ingredients in a medium bowl and whisk until well combined.
Grease heated skillet with butter, oil or baking spray. Pour batter onto skillet making pancakes as large or small as desired. Cook until edges start to firm and bubbles appear in the middle of the pancake. Flip and cook for an additional 1 minute on the other side until cooked through.

Breakfast Cereal Cupcakes
Serves 4
Ingredients
Yellow Cake Mix | 1 box |
Cereal | 1 cup |
Cereal | 24 |
Vanilla | 1 |
Directions
Bake the cupcakes according to the package’s instructions and allow cupcakes to cool completely once baked.
Prepare vanilla buttercream, or use your favorite store-bought variety. If you’re using only one kind of cereal for your cupcakes, go ahead and add the ground cereal crumbs to the mixer once the buttercream is made. You want your crumbs to be very fine so they don’t clog your piping bag and so the frosting doesn’t appear too “chunky”. If you’re doing 5 flavors of cereal like I did (or whatever number you’d like), you’ll have to grind up all the cereal separately so you have about 3 tablespoons of each one. Then divide the plain buttercream into 5 bowls, and add one type of cereal crumbs to each. I then put the frostings all in separate piping bags with the corner snipped off, and did a simple swirl of frosting on each cupcake.
Add the extra cereal for decoration right before serving, or else the cereal will get soggy and stale from the frosting. Eat the leftover cereal for breakfast 🙂
Kiwi Pineapple Spinach Smoothie
Serves 4
Ingredients
Avocado | 1 |
Kiwi | 2 |
Baby Spinach | 1.5 cups |
Pineapple Chunks | 1 cup |
Banana | 1 |
Plain Greek Yogurt | 1 cup |
Milk | 0.5 cup |
Directions
Place all the ingredients into the pitcher of a high powered blender. Blend the ingredients together until smooth, approximately 1-2 minutes.
Divide the smoothie between 2 8-ounce glasses or 4 4-ounce glasses and serve immediately.
