Veggie Kabobs by Chef Hibah

The perfect side for a summer cookout! These veggie kabobs are bursting with flavor and low in calories. They’re a fantastic addition to any summer grilling menu!

 

Veggie Kabobs

Serves 4

Ingredients:
3Bell Peppers (cut in half, then cut each half into 4)
1 small containerCremini Mushrooms
4Roma Tomatoes (cut into quarters)
2Red Onions (cut into quarters)
1 TbsEVOO
1 TbsGarlic Powder
Salt & Pepper
8 Wooden Skewers
Directions:
  • Place the cut veggies on the skewers, alternating between the veggies – you can place them in any order you’d like.
  • Put the EVOO on the veggies and then the spices listed above. Rub them on well!
  • Grill until tender.
  • Enjoy!
