Zucchini Tuna Melt by Chef Genie

Zucchini Tuna Melt by Chef Genie

Serves 1

2 PouchesTuna
1/4 containerSingle Serving Container of Nonfat Greek Yogurt
2 TbsSharp Cheddar Cheese
1/8 MediumRed Onion
1 MediumZucchini
1/2 tsp eachSalt & Pepper

  • Wash and slice zucchini in half lengthwise.
  • Use a spoon to scoop out the center.
  • Season the zucchini with salt and pepper. Place on a foil-lined sheet pan and bake for 10 minutes at 350F.
  • While the zucchini is in the oven, combine tuna, diced red onion, greek yogurt, salt, and pepper.
  • Spoon the tuna mixture into the zucchini boats.
  • Top with cheddar cheese and thinly sliced jalapeño.
  • Broil until golden brown, and enjoy!
